  • 1620 slices deli turkey breast
  • 812 slices cheddar, provolone, or Swiss cheese
  • 8 tablespoons cream cheese, softened
  • Salt and pepper to taste
  • Optional: thinly sliced cucumber, bell pepper strips, or shredded lettuce

Instructions

  1. Soften the cream cheese by letting it sit at room temperature for 10 minutes or microwaving for 5-10 seconds.
  2. Lay a flour tortilla flat on a cutting board. If stiff, warm in microwave for 5 seconds.
  3. Spread a thin, even layer of cream cheese over the entire tortilla, leaving a half-inch border around the edges.
  4. Place 4-5 slices of turkey evenly over the cream cheese, overlapping slightly.
  5. Lay 2-3 slices of cheese on top of the turkey, overlapping slightly.
  6. If using vegetables, place them in a single row along the bottom third of the tortilla.
  7. Starting from the bottom edge, roll the tortilla tightly away from you, tucking in the filling as you go. Place seam-side down.
  8. Wrap the rolled tortilla tightly in plastic wrap and refrigerate for 10-15 minutes (optional but recommended for cleaner slicing).
  9. Using a sharp serrated knife, slice the roll into 1-inch thick rounds using a gentle sawing motion.
  10. If needed, secure loose pieces with toothpicks.
  11. Arrange pinwheels in a lunchbox or container. Serve immediately or refrigerate for up to 24 hours.

Notes

For best results, let cream cheese soften before spreading. Avoid watery vegetables like tomatoes to prevent sogginess. Roll-ups taste even better after a few hours in the fridge as flavors meld. Can be frozen for up to 1 month (unsliced).
