A quick and easy no-bake dessert featuring a crunchy pretzel crust, creamy cream cheese layer, and fresh strawberry gelatin topping, perfect for summer gatherings.

Ingredients

Scale
  • 2 cups crushed pretzels
  • 2/3 cup granulated sugar
  • 3/4 cup unsalted butter, melted
  • 8 ounces cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 1/2 cups heavy whipping cream, cold
  • 2 cups fresh strawberries, chopped
  • 1 package (3 oz) strawberry flavored gelatin
  • 1 cup boiling water
  • 1 cup cold water

Instructions

  1. Crush 2 cups of pretzels finely using a food processor or by placing them in a zip-top bag and rolling with a rolling pin.
  2. In a bowl, combine crushed pretzels, 2/3 cup granulated sugar, and 3/4 cup melted unsalted butter. Mix until evenly moistened.
  3. Press the pretzel mixture firmly and evenly into the bottom of a 9×13 inch baking dish. Chill in the refrigerator.
  4. In a large mixing bowl, beat 8 ounces softened cream cheese until smooth and fluffy.
  5. Slowly add 1 cup powdered sugar and 1 teaspoon vanilla extract to the cream cheese, mixing well.
  6. In a separate bowl, whip 1 1/2 cups cold heavy cream until stiff peaks form.
  7. Gently fold the whipped cream into the cream cheese mixture until combined but light and airy.
  8. Spread the cream cheese layer evenly over the chilled pretzel crust. Refrigerate for about 20 minutes.
  9. Dissolve 1 package strawberry gelatin in 1 cup boiling water, stirring until completely dissolved.
  10. Add 1 cup cold water and 2 cups chopped fresh strawberries to the gelatin mixture. Let cool to room temperature without setting.
  11. Pour the strawberry gelatin mixture gently over the cream cheese layer.
  12. Chill the entire dessert for at least 3 hours or until the gelatin is firm.
  13. Cut into squares and serve chilled.

Notes

Use fresh ripe strawberries for best flavor. For a vegetarian gelatin alternative, use agar-agar powder with adjusted preparation. For dairy-free, substitute coconut cream and dairy-free cream cheese. Chill thoroughly to ensure layers set properly. Crush pretzels finely to avoid a crumbly crust. Use softened cream cheese and whip cream to stiff peaks for best texture.
