  • 1/4 cup pure maple syrup
  • 2 tablespoons bourbon

  • 2 large eggs, lightly beaten
  • 1 cup pecan halves, roughly chopped
  • 1/2 cup all-purpose flour
  • 1/2 cup packed light brown sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 cup unsalted butter, cold and cut into small cubes

Instructions

  1. Preheat your oven to 400ยฐF (200ยฐC). Line a large baking sheet with parchment paper.
  2. Place the cubed sweet potatoes on the prepared baking sheet. Drizzle with 1 tablespoon of the melted butter and a pinch of salt. Toss to coat. Roast for 25-30 minutes, or until fork-tender and edges are slightly caramelized.
  3. While the potatoes roast, make the streusel. In a medium bowl, whisk together the flour, brown sugar, cinnamon, and nutmeg. Add the cold butter cubes and chopped pecans. Using a pastry cutter or two forks, cut the butter into the dry ingredients until the mixture resembles coarse crumbs with some pea-sized butter pieces remaining. Refrigerate until needed.
  4. Transfer the roasted sweet potatoes to a large mixing bowl. Add the remaining 3 tablespoons of melted butter, maple syrup, bourbon, salt, and pepper. Mash with a potato masher or beat with a hand mixer until smooth and creamy. Taste and adjust seasoning.
  5. Let the sweet potato mixture cool for about 5 minutes. Then, fold in the beaten eggs until just combined.
  6. Pour the sweet potato mixture into a greased 9×13-inch baking dish and spread into an even layer. Sprinkle the chilled pecan streusel evenly over the top.
  7. Reduce the oven temperature to 350ยฐF (175ยฐC). Bake the casserole for 30-35 minutes, or until the streusel is golden brown and the filling is set around the edges but still slightly jiggly in the center.
  8. Let the casserole rest for at least 10 minutes before serving.

Notes

Roasting the sweet potatoes instead of boiling concentrates their flavor and prevents a watery casserole. Let the mixture cool for 5 minutes before adding eggs to avoid scrambling. The casserole can be assembled (without baking) up to 2 days in advance; add 10-15 minutes to baking time if starting from cold. For a non-alcoholic version, substitute bourbon with 1 tablespoon extra maple syrup and 1 teaspoon vanilla extract.
