A lighter, balanced Thanksgiving charcuterie board designed to satisfy guests without ruining their appetite for the main meal. Quick to assemble with fresh vegetables, lean proteins, and flavorful cheeses.

Ingredients

Scale
  • 8 ounces oven-roasted turkey breast, thinly sliced
  • 4 ounces prosciutto or lean prosciutto
  • 4 ounces smoked salmon (optional)
  • 4 ounces brie cheese
  • 4 ounces goat cheese or reduced-fat cream cheese
  • 4 ounces sharp cheddar, cubed
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber slices
  • 1/2 cup baby carrots
  • 1/2 cup sugar snap peas or snow peas
  • 1 cup red grapes
  • 1/2 cup dried apricots or dried cranberries
  • 1 apple, sliced
  • 1 pear, sliced
  • 1/4 cup honey or maple syrup
  • 1/4 cup Dijon mustard or whole-grain mustard
  • 1/4 cup pumpkin seeds or pepitas
  • 1/4 cup walnuts or pecans, toasted
  • 1 baguette, sliced and toasted
  • 1 cup whole-wheat crackers or rice crackers
  • Fresh herbs for garnish (rosemary, thyme, or sage)

Instructions

  1. Prep the ingredients: Wash and dry all produce. Halve cherry tomatoes, slice cucumber into rounds, and cut apple and pear. Toss apple slices in lemon juice to prevent browning. Slice baguette into 1/2-inch rounds and toast at 350ยฐF for 5-7 minutes until golden.
  2. Arrange the bowls: Place small bowls on the board in a triangle pattern for honey, mustard, and dried apricots.
  3. Add the cheeses: Place brie in one corner, goat cheese in another, and cubed cheddar in a third. Let brie come to room temperature for 30 minutes before serving.
  4. Layer the proteins: Fold turkey slices into loose ribbons and arrange near cheddar. Do the same with prosciutto. Roll smoked salmon into rosettes and place near brie.
  5. Fill in with vegetables: Scatter cherry tomatoes, cucumber slices, baby carrots, and sugar snap peas around the board, grouping by color.
  6. Add the fruits: Place grapes in small clusters. Arrange apple and pear slices near goat cheese. Scatter dried cranberries or apricots in empty spaces.
  7. Top with crunch: Sprinkle pumpkin seeds and walnuts over the board, scattering evenly.
  8. Finish with bread and crackers: Arrange toasted baguette slices and crackers around the edges of the board, fanning them out.
  9. Garnish and serve: Tuck fresh herbs around the board. Drizzle honey over brie and goat cheese just before serving. Serve immediately or refrigerate for up to 2 hours (add bread and crackers just before serving).

Notes

For best flavor, let cheeses and meats come to room temperature about 30 minutes before serving. If making ahead, leave apple and pear slices off until last minute to prevent browning. Do not overcrowd the board; use a second board if needed. Leftovers should be separated into individual containers; cheeses and meats keep 3-4 days, vegetables and fruits 1-2 days, bread and crackers best within 24 hours.
