  • 6 bone-in, skin-on chicken thighs (about 3 pounds)
  • 1/3 cup honey (113 g)
  • 1/4 cup low sodium soy sauce (60 ml)
  • 4 cloves garlic, minced
  • 2 tablespoons rice vinegar (30 ml)
  • 1/4 cup water (60 ml)
  • 1 teaspoon sesame oil (5 ml), optional
  • 1/2 teaspoon ground black pepper (2.5 ml)
  • 1/4 teaspoon red pepper flakes, optional

Instructions

  1. Pat the 6 chicken thighs dry with paper towels to help the sauce stick better and prevent sogginess.
  2. In a medium bowl, whisk together honey, soy sauce, minced garlic, rice vinegar, water, sesame oil, ground black pepper, and optional red pepper flakes until smooth and glossy.
  3. Place the chicken thighs skin-side down at the bottom of the crockpot. Pour the sauce evenly over the chicken, coating all pieces. Do not stir.
  4. Cover and cook on low for 6 to 7 hours until the chicken is tender and the sauce thickens slightly.
  5. Optional: For a sticky glaze and crispy skin, transfer chicken to a foil-lined baking sheet and broil for 3-5 minutes, watching carefully to avoid burning. Alternatively, sear thighs skin-side down in a hot skillet for 2 minutes until crisp.
  6. Serve the chicken with extra sauce spooned over and garnish with chopped green onions or sesame seeds if desired.

Notes

Pat chicken dry before cooking to prevent sogginess. Optional broil or sear step adds crispy skin and thicker glaze. Avoid opening crockpot lid during cooking to maintain heat. Use fresh garlic cloves for best flavor. To thicken sauce if watery, mix 1 teaspoon cornstarch with 1 tablespoon cold water and cook uncovered on high for 15 minutes.
