  • 1 cup (150 g) sliced strawberries
  • 1 medium banana, sliced
  • ½ cup (75 g) blueberries
  • 1 medium peach or nectarine, diced
  • 1 cup (100 g) low-sugar granola
  • 12 tablespoons (0.51 fl oz) honey or maple syrup (optional)
  • 1 tablespoon (15 g) chia seeds or flaxseeds (optional)
  • A few sprigs of fresh mint leaves (optional)

Instructions

  1. Prepare the fruit (about 10 minutes): Wash all fresh fruit thoroughly. Slice strawberries, bananas, and peaches into bite-sized pieces. If using frozen fruit, thaw and drain excess water.
  2. Optional: Sweeten the yogurt (2 minutes): In a mixing bowl, stir the yogurt with honey or maple syrup and chia seeds if using. Taste and adjust sweetness as desired.
  3. Layer the parfaits (5-7 minutes): Spoon 2 tablespoons (1 fl oz) of yogurt into the bottom of each cup. Add a layer of mixed fruit (about 2 tablespoons or 1 oz), then a layer of granola (about 1 tablespoon or 0.5 oz). Repeat layering once more, ending with granola on top.
  4. Garnish and serve: Add a fresh mint leaf on top for color and aroma. Serve immediately or cover and refrigerate for up to 2 hours before serving.

Notes

Add granola just before serving to keep it crunchy. Toss sliced bananas in lemon juice to prevent browning if prepping ahead. Use dairy-free yogurt and vegan granola for a vegan version. Assemble parfaits no more than 2 hours before serving to maintain freshness.
