Ingredients

Scale
  • 3 ½ cups (440g) all-purpose flour
  • 1 ¼ cups (300ml) warm water (110°F/43°C)
  • 2 ¼ teaspoons (1 packet) active dry yeast
  • 1 tablespoon brown sugar
  • 3 tablespoons (42g) unsalted butter, melted
  • 1 ½ teaspoons fine sea salt
  • ⅓ cup (80g) baking soda
  • 10 cups (2.4 liters) water (for boiling)
  • Coarse sea salt or pretzel salt, for topping
  • 2 tablespoons (28g) unsalted butter, melted (for brushing)
  • 8 oz (225g) sharp cheddar cheese, freshly shredded
  • ¾ cup (180ml) lager beer
  • 4 oz (115g) cream cheese, softened
  • 1 teaspoon Dijon mustard
  • ½ teaspoon Worcestershire sauce
  • ½ teaspoon garlic powder
  • Salt and black pepper, to taste
  • 1 tablespoon cornstarch (optional, for thicker dip)

Instructions

  1. Activate the yeast: In a large mixing bowl, combine warm water (110°F/43°C) with brown sugar. Sprinkle yeast on top and let sit for 5-7 minutes until foamy.
  2. Make the dough: Add melted butter, salt, and 2 cups of flour to the yeast mixture. Mix until combined, then gradually add remaining flour, ½ cup at a time, until a shaggy dough forms. Knead with a dough hook (5-6 minutes) or by hand (8-10 minutes) until smooth and elastic.
  3. First rise: Shape dough into a ball and place in a lightly greased bowl. Cover and let rise in a warm spot for 45-60 minutes until doubled in size.
  4. Shape the pretzel bites: Punch down dough and turn onto a floured surface. Divide into 4 equal pieces. Roll each into a 12-inch long rope, 1 inch thick. Cut into 1-inch pieces (about 40-50 total). Place on a parchment-lined baking sheet.
  5. Boil the pretzel bites: Preheat oven to 425°F (220°C). In a large pot, bring 10 cups of water to a boil. Carefully add baking soda (it will bubble up). Reduce to a gentle simmer. Working in batches of 6-8, drop pretzel bites into water for 30-45 seconds. Remove with a slotted spoon and return to baking sheet.
  6. Bake: Brush boiled pretzel bites with melted butter and sprinkle with coarse salt. Bake for 12-15 minutes until deep golden brown, rotating sheet halfway through.
  7. Make the beer cheese dip: In a small saucepan over medium-low heat, whisk together beer and cream cheese until smooth. Gradually add shredded cheddar, stirring constantly until melted. Stir in Dijon mustard, Worcestershire sauce, garlic powder, salt, and pepper. For a thicker dip, mix cornstarch with 1 tablespoon cold water and stir in. Keep warm over low heat.
  8. Serve immediately: Transfer hot pretzel bites to a platter, brush with more melted butter if desired, and serve with warm beer cheese dip.

Notes

Don’t skip the boiling step—it creates the signature chewy crust. Use freshly shredded cheese for a smooth dip. Water temperature for yeast should be around 110°F (43°C). For a gluten-free version, use a 1:1 gluten-free flour blend. Leftover pretzel bites can be stored at room temperature for up to 2 days; reheat in a 350°F oven for 5-7 minutes. The dip keeps in the fridge for up to 4 days.
