Ingredients

Scale
  • 1 lb lean ground turkey (93/7 works best)
  • 1 medium zucchini, finely grated (about 1 cup squeezed dry)
  • 1 medium carrot, finely grated (about ½ cup)
  • ½ cup finely chopped onion (yellow or white)
  • 2 cloves garlic, minced
  • ½ cup whole wheat breadcrumbs (or regular panko)
  • 1 large egg, lightly beaten
  • ¼ cup grated Parmesan cheese
  • 1 tsp dried oregano
  • ½ tsp fine sea salt
  • ¼ tsp freshly ground black pepper
  • 2 tbsp olive oil (for cooking)
  • Your favorite marinara sauce (for serving, optional)
  • Cooked spaghetti or zucchini noodles (for serving, optional)
  • Fresh basil or parsley for garnish (optional)

Instructions

  1. Prep the vegetables. Grate the zucchini and carrot using a box grater. Place the grated zucchini in a clean kitchen towel and squeeze out as much liquid as possible. Finely chop the onion and mince the garlic.
  2. Combine the ingredients. In a large mixing bowl, add the ground turkey, squeezed zucchini, grated carrot, chopped onion, minced garlic, breadcrumbs, beaten egg, Parmesan cheese, oregano, salt, and pepper. Use your hands to gently mix everything together until evenly combined. Do not overmix.
  3. Form the meatballs. Using a cookie scoop or your hands, form the mixture into 1.5-inch meatballs. You should get about 18-20 meatballs. Place them on a plate or baking sheet.
  4. Heat the skillet. Place a large non-stick skillet over medium heat and add the olive oil. Let it heat for about 1 minute until the oil shimmers but does not smoke.
  5. Cook the meatballs. Carefully place the meatballs in the skillet in a single layer. Do not crowd the pan; work in batches if needed. Cook for 8-10 minutes, turning occasionally, until all sides are golden brown and the internal temperature reaches 165°F (74°C).
  6. Add sauce (optional). If serving with marinara, pour about 1 cup of sauce into the skillet after the meatballs are cooked. Reduce heat to low, cover, and let simmer for 3-4 minutes.
  7. Rest and serve. Remove from heat and let the meatballs rest for 2 minutes before serving. Serve over pasta, zoodles, or on their own with a sprinkle of fresh herbs.

Notes

Don’t skip squeezing the zucchini dry—it prevents soggy meatballs. Use a light hand when mixing to avoid dense meatballs. Keep heat at medium for even cooking. Let meatballs rest before serving to redistribute juices. For gluten-free, use gluten-free panko or almond flour. For dairy-free, omit Parmesan or use a dairy-free alternative like nutritional yeast. Meatballs can be baked at 400°F (200°C) for 15-18 minutes or cooked in an air fryer at 375°F (190°C) for 10-12 minutes.
