  • 2 lbs (900g) boneless, skinless chicken thighs (or breasts)
  • ½ cup (170g) honey
  • 68 cloves garlic, minced
  • Salt and pepper to taste
  • Optional: 1 tablespoon soy sauce, pinch of red pepper flakes, 1 tablespoon cornstarch mixed with 2 tablespoons water

Instructions

  1. Pat the chicken dry with paper towels and trim excess fat. Season lightly with salt and pepper.
  2. Mince the garlic cloves finely.
  3. In a small bowl, combine the honey and minced garlic. Stir until evenly distributed.
  4. Place the chicken in the crockpot in a single layer. Pour the honey-garlic mixture over the top, turning to coat.
  5. Cover and cook on LOW for 4-6 hours or on HIGH for 2-3 hours, until chicken reaches 165°F (74°C) and is fork-tender.
  6. Optional: For a thicker sauce, pour the liquid into a saucepan and simmer for 5-7 minutes, or stir in a cornstarch slurry and cook on HIGH with lid off for 10-15 minutes.
  7. Serve the chicken with sauce spooned over. Garnish with green onions, sesame seeds, or parsley if desired.

Notes

Don’t lift the lid while cooking to avoid heat loss. Pat chicken dry for best glaze. Chicken thighs are more forgiving than breasts. Do not add extra liquid. For extra caramelization, sear chicken before adding to crockpot.
