A simple, fast, and kid-approved BBQ chicken pizza with a crispy crust, sweet tangy BBQ sauce, and tender chicken, perfect for family meals and picky eaters.

  • 1 pre-made pizza dough (about 12 oz / 340 g)
  • 1 tablespoon olive oil (for brushing the crust)
  • 1 cup cooked chicken, shredded or chopped (rotisserie chicken preferred)
  • ½ cup BBQ sauce (mild, sweet variety recommended)
  • 1½ cups shredded mozzarella cheese (whole milk mozzarella preferred)
  • ½ cup shredded cheddar cheese (optional)
  • ¼ cup thinly sliced red onion (optional)
  • Fresh cilantro or parsley leaves for garnish (optional)
  • Ranch dressing or sour cream for serving (optional)

Instructions

  1. Preheat the oven to 475°F (245°C). If using a pizza stone, place it on the middle rack before heating for about 30 minutes.
  2. Lightly flour your work surface. Roll out the pizza dough into a roughly 12-inch (30 cm) circle. Let rest for 5 minutes if it resists stretching.
  3. Transfer the rolled dough to parchment paper or a pizza peel. Brush the edges lightly with olive oil for a golden, crispy crust.
  4. In a bowl, toss the shredded chicken with half the BBQ sauce (about ¼ cup or 60 ml) to keep it moist and flavorful.
  5. Spread the remaining BBQ sauce evenly over the dough, leaving about a 1-inch (2.5 cm) border on the edges.
  6. Distribute the BBQ-coated chicken evenly across the pizza. Sprinkle mozzarella and cheddar cheese on top, followed by optional onions.
  7. Slide the pizza (on parchment) onto the preheated stone or baking sheet. Bake for 12–15 minutes until the crust is golden and crisp and cheese is bubbly and starting to brown.
  8. Let the pizza rest for 2–3 minutes after baking. Sprinkle with fresh cilantro or parsley if using. Slice with a pizza cutter and serve warm with optional ranch or sour cream.

Notes

Do not overload toppings to keep crust crispy. Preheat pizza stone or baking sheet for best crust. Brushing olive oil on crust helps achieve golden edges. Let pizza rest after baking for easier slicing. Reheat leftovers in a skillet to maintain crispiness. Use gluten-free dough or dairy-free cheese for dietary adaptations.
