  • 1 can (8 oz) refrigerated crescent roll dough
  • 1 wheel (8 oz) brie cheese
  • 1/2 cup whole berry cranberry sauce
  • 2 tablespoons unsalted butter, melted
  • 1 tablespoon fresh rosemary, finely chopped
  • Flaky sea salt, for finishing

Instructions

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease a 10-inch cast iron skillet.
  2. Prepare the brie: Take your cold brie wheel and cut it into 1/2-inch cubes. Do not remove the rind.
  3. Open the crescent roll dough: Unroll the dough onto a clean cutting board. If using perforated triangles, press the seams together to create a solid sheet. Cut the dough into 12 equal squares.
  4. Assemble the pull-apart bread: Place a cube of brie and a small spoonful of cranberry sauce (about 1/2 teaspoon) in the center of each dough square. Bring the corners up and pinch them together to form a bundle. Place each bundle seam-side down on the prepared baking sheet or skillet, arranging them in a circle.
  5. Brush with butter: In a small bowl, mix the melted butter with the chopped rosemary. Brush the mixture generously over the tops of each dough bundle.
  6. Bake: Place the baking sheet in the preheated oven and bake for 15-18 minutes, or until the dough is golden brown and the brie is bubbly and melted.
  7. Finish and serve: Remove from the oven and let it cool for 2-3 minutes on the baking sheet. Sprinkle with flaky sea salt while still warm. Serve warm, directly from the skillet or baking sheet.

Notes

Keep the brie cold for easier cutting. Do not overfill the dough bundles to prevent leakage. For a crispy bottom, use a cast iron skillet. Assemble bundles up to 2 hours ahead and refrigerate before baking. Freeze unbaked bundles for up to 2 months.
