  • 1/2 cup cooked or canned sweet corn kernels
  • 1/2 cup finely diced raw carrots (optional)
  • 1/2 cup cooked green peas (optional)
  • Salt and pepper to taste
  • Optional: pinch of garlic powder or smoked paprika
  • Optional: chopped fresh parsley for garnish

Instructions

  1. Bring 4 quarts of water to a rolling boil. Add 1 tablespoon salt and the pasta. Cook according to package instructions until al dente, about 7-9 minutes, stirring occasionally.
  2. Drain pasta and rinse under cold water to stop cooking and cool thoroughly.
  3. In a medium bowl, whisk together mayonnaise, sour cream, and milk until smooth.
  4. Add shredded cheddar cheese to the dressing and mix well. Season lightly with salt and pepper. If too thick, add a splash more milk.
  5. Add cooled pasta to the dressing and toss gently to coat evenly.
  6. Fold in sweet corn, diced carrots, and peas if using. Mix gently to avoid breaking the pasta.
  7. Taste and adjust seasoning if needed, adding a pinch of garlic powder or more salt if desired.
  8. Cover and refrigerate for at least 30 minutes to chill and let flavors meld.
  9. Before serving, stir gently and sprinkle with fresh parsley if desired. Let sit at room temperature for 10 minutes if kids prefer less cold food.

Do not overcook pasta; rinse under cold water to stop cooking and prevent clumping. Use freshly shredded cheese for creamier dressing. Adjust seasoning gently for kids. Chill at least 30 minutes for best flavor. Can substitute mayo with Greek yogurt or avocado for a healthier twist.
