Ingredients

Scale
  • 1 ยพ cups all-purpose flour (220 grams)
  • 1 ยฝ teaspoons baking powder
  • 1 teaspoon pumpkin pie spice
  • 1 teaspoon ground cinnamon
  • ยฝ teaspoon salt
  • ยฝ cup granulated sugar (100 grams)
  • ยฝ cup packed light brown sugar (100 grams)
  • 2 large eggs, room temperature
  • 1 cup pumpkin puree (240 grams)
  • ยฝ cup vegetable oil (120 ml)
  • 1 teaspoon vanilla extract
  • ยฝ cup unsalted butter (113 grams), melted
  • ยพ cup granulated sugar (150 grams)
  • 2 teaspoons ground cinnamon

Instructions

  1. Preheat your oven to 350ยฐF (175ยฐC). Grease your donut pan thoroughly with non-stick spray or melted butter.
  2. In a medium bowl, whisk together the dry ingredients: flour, baking powder, pumpkin pie spice, cinnamon, and salt. Whisk for about 20 seconds to ensure even distribution.
  3. In a large bowl, combine the sugars and eggs. Whisk vigorously for about 1 minute until smooth and slightly lighter in color.
  4. Add the pumpkin puree, oil, and vanilla extract to the sugar-egg mixture. Whisk until well combined and smooth.
  5. Pour the dry ingredients into the wet ingredients. Use a rubber spatula to fold together gently until just combined. Do not overmix; a few small lumps are fine.
  6. Transfer the batter to a piping bag or Ziploc bag. Snip about ยฝ inch off one corner. Pipe the batter evenly into the donut cavities, filling each about ยพ full.
  7. Bake for 10-12 minutes or until a toothpick inserted into the thickest part comes out clean. The donuts should be golden brown around the edges and spring back when lightly touched.
  8. Let the donuts cool in the pan for 3-4 minutes. Gently run a small knife around the edges to loosen them, then turn the pan over onto a cooling rack.
  9. While the donuts are still warm (but not hot), brush them generously with melted butter on both sides. Immediately dip them into the cinnamon sugar mixture, turning to coat evenly.
  10. Place the coated donuts on a cooling rack and let them set for about 5 minutes. Serve warm or at room temperature.

Notes

Don’t overmix the batter; a few lumps are fine. Room temperature ingredients ensure a lighter texture. Grease the pan generously to prevent sticking. Apply the cinnamon sugar coating while donuts are warm for best adhesion. For a gluten-free version, use a 1:1 gluten-free baking blend. For a dairy-free option, use melted coconut oil or plant-based butter for the coating.
