These baked buffalo cauliflower bites are crispy, tangy, and perfectly spiced for the whole family. A healthier alternative to chicken wings, they’re kid-approved and served with a creamy ranch dip.

  • 1 large head of cauliflower (about 2 pounds / 900 grams), cut into bite-sized florets
  • 1 cup (120 grams) all-purpose flour (or gluten-free all-purpose blend)
  • 1 cup (240 ml) milk (dairy or unsweetened almond milk)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 1/2 cups (150 grams) panko breadcrumbs
  • 1/3 cup (80 ml) buffalo hot sauce (e.g., Frank’s RedHot)
  • 2 tablespoons (30 grams) unsalted butter, melted (or vegan butter)
  • 1 tablespoon honey or maple syrup
  • For the ranch dip: 1/2 cup (120 grams) plain Greek yogurt or sour cream, 1/4 cup (60 ml) buttermilk, 1/2 teaspoon dried dill, 1/2 teaspoon dried parsley, 1/4 teaspoon garlic powder, 1/4 teaspoon onion…

Instructions

  1. Preheat your oven to 450ยฐF (230ยฐC). Line a large baking sheet with parchment paper or a silicone mat.
  2. Wash and thoroughly dry the cauliflower. Cut into bite-sized florets (about 1 1/2 inches wide). Pat dry with a clean towel.
  3. In a shallow bowl, whisk together flour, milk, garlic powder, onion powder, smoked paprika, salt, and black pepper until smooth (consistency of thin pancake batter).
  4. In another shallow bowl, add panko breadcrumbs. Optionally, toss with a pinch of salt and garlic powder.
  5. Working in batches, dip cauliflower florets into the batter, letting excess drip off, then roll in panko breadcrumbs, pressing gently to adhere. Place on prepared baking sheet in a single layer, not touching.
  6. Bake for 20 minutes, then carefully flip each piece. Bake for another 10 to 15 minutes, until golden brown and crispy (total 30-35 minutes).
  7. While cauliflower bakes, combine buffalo hot sauce, melted butter, and honey (or maple syrup) in a small bowl. Whisk until smooth.
  8. As soon as cauliflower is done, transfer hot florets to a large mixing bowl. Pour buffalo sauce over and gently toss with a spatula until evenly coated.
  9. For the ranch dip: In a small bowl, stir together Greek yogurt or sour cream, buttermilk, dried dill, dried parsley, garlic powder, onion powder, and a pinch of salt and pepper. Adjust seasoning to taste. Refrigerate until ready to serve.
  10. Serve immediately with ranch dip and optional celery sticks.

Notes

Pat cauliflower completely dry to ensure crispy coating. Use panko breadcrumbs for best crunch. Toss in sauce immediately after baking. For extra crispiness, place coated florets on a wire rack over the baking sheet. Leftovers can be stored in the refrigerator for up to 3 days; reheat in a 400ยฐF oven for 5-7 minutes (do not microwave).
