  • ½ cup (130g) creamy peanut butter
  • ¼ cup (85g) honey
  • 1 teaspoon vanilla extract
  • 2 tablespoons (14g) ground flaxseed
  • ¼ cup (45g) mini chocolate chips
  • ⅛ teaspoon salt

Instructions

  1. In a large mixing bowl, combine the old-fashioned rolled oats, ground flaxseed, and salt. Stir to distribute evenly.
  2. Add the creamy peanut butter, honey, and vanilla extract. Mix until the ingredients are well combined and the mixture is thick and slightly sticky, about 2 minutes.
  3. Fold in the mini chocolate chips gently to avoid melting them.
  4. Refrigerate the mixture for 10-15 minutes to firm up.
  5. Scoop about 1 tablespoon of the mixture and roll into smooth balls. Repeat with the remaining mixture to make 12-14 balls.
  6. Place the balls on a parchment-lined baking sheet and refrigerate for another 10 minutes to set.

Notes
