  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, cold and cubed
  • 1 cup buttermilk
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Drain canned peaches, reserving 1/4 cup of the syrup. Spread peaches evenly in a 9×13 inch baking dish and pour reserved syrup over the fruit.
  3. In a large bowl, whisk together flour, sugar, baking powder, and salt.
  4. Add cold, cubed butter to the flour mixture. Use a pastry blender or forks to cut in the butter until the mixture resembles coarse crumbs with pea-sized butter pieces.
  5. Pour in buttermilk and stir gently with a spatula until the dough is shaggy and sticky. Do not overmix.
  6. Drop large spoonfuls of dough directly onto the peaches in distinct mounds.
  7. Bake for 45-55 minutes until the topping is deep golden brown and the filling is bubbling vigorously. Tent with foil if the top browns too quickly.
