Ingredients

Scale
  • 2 tablespoons olive oil
  • 1 large yellow onion, diced (about 1 ยฝ cups)
  • 3 cloves garlic, minced
  • 2 celery stalks, diced (about ยฝ cup)
  • 2 medium carrots, diced (about ยพ cup)
  • 1 smoked turkey leg or ham hock (about 8–10 ounces)
  • 6 cups low-sodium chicken broth
  • 3 cans (15 ounces each) black-eyed peas, drained and rinsed
  • 1 bay leaf
  • 1 teaspoon smoked paprika
  • ยฝ teaspoon dried thyme
  • ยผ teaspoon cayenne pepper (optional)
  • Salt and black pepper to taste
  • Cooked white rice or cornbread (for serving, optional)
  • Fresh parsley, chopped (for garnish, optional)
  • Hot sauce (for serving, optional)
  • Green onions, sliced (for garnish, optional)

Instructions

  1. Prep your vegetables (5 minutes): Dice the onion, celery, and carrots into roughly equal-sized pieces (about ยฝ inch). Mince the garlic. Rinse and drain the black-eyed peas. Set everything aside.
  2. Render the smoked meat (5 minutes): Place your Dutch oven over medium heat and add the olive oil. Once the oil shimmers, add the smoked turkey leg (or ham hock). Let it cook for 2-3 minutes per side, until browned and starting to release its fat. Use tongs to remove the meat and set it aside on a plate.
  3. Sautรฉ the aromatics (4 minutes): In the same pot with the rendered fat, add the diced onion, celery, and carrots. Cook for 3 minutes, stirring occasionally, until the onions turn translucent and the carrots start to soften. Add the minced garlic, smoked paprika, dried thyme, and cayenne pepper. Cook for 1 more minute until the garlic is fragrant.
  4. Build the broth (2 minutes): Pour in the chicken broth, scraping the bottom of the pot with your wooden spoon to release any browned bits. Add the bay leaf. Return the smoked turkey leg to the pot. Bring everything to a boil over high heat (about 2 minutes).
  5. Simmer with the lid on (15 minutes): Once boiling, reduce the heat to medium-low, cover the pot with a tight-fitting lid, and let it simmer for 15 minutes.
  6. Shred the meat (3 minutes): After 15 minutes, remove the smoked turkey leg from the pot using tongs. Place it on a cutting board and let it cool for 1-2 minutes. Use two forks to shred the meat, discarding the skin and bones. Return the shredded meat to the pot.
  7. Add the black-eyed peas (2 minutes): Stir in the drained and rinsed black-eyed peas. Let them heat through for about 2 minutes. Taste the broth and adjust seasoning with salt and black pepper. Remove the bay leaf.
  8. Serve and enjoy (1 minute): Ladle the soup into bowls. Top with fresh parsley, sliced green onions, and a drizzle of hot sauce if desired. Serve with rice or cornbread.

Notes

Don’t skip browning the meatโ€”it builds the foundation of flavor. Rinse canned beans thoroughly to avoid cloudy, overly salty soup. Layer spices at the right time (with the garlic) to release their essential oils. Taste before adding salt, as smoked meats vary in saltiness. For thicker soup, mash about ยฝ cup of black-eyed peas against the side of the pot before serving.
