A quick and flavorful weeknight dinner featuring juicy chicken thighs in a sticky, sweet, and savory honey garlic sauce, ready in under 20 minutes.

Ingredients

  • Boneless, skinless chicken thighs
  • Salt and black pepper
  • Cornstarch (optional, for dusting)
  • Honey
  • Low-sodium soy sauce (or tamari for gluten-free)
  • Rice vinegar
  • Fresh garlic, minced
  • Fresh ginger, grated
  • Water
  • Cooking oil
  • Toasted sesame oil
  • Red pepper flakes
  • Green onions, sliced

Instructions

  1. Pat chicken thighs dry with paper towels and season generously with salt and black pepper. Optionally dust lightly with cornstarch.
  2. In a small bowl, whisk together honey, soy sauce, rice vinegar, minced garlic, grated ginger, a splash of water, and cornstarch until smooth. Set aside.
  3. Heat a large skillet over medium-high heat and add a tablespoon of oil. Wait until the oil shimmers.
  4. Season chicken thighs with salt and pepper on both sides.
  5. Place chicken in the hot pan. Do not move for 3-4 minutes to develop a golden-brown crust. Flip and cook for another 3-4 minutes until cooked through. Remove chicken to a plate.
  6. Pour the sauce mixture into the same pan. Scrape up browned bits from the bottom. Simmer for 1-2 minutes until the sauce thickens and coats the back of a spoon.
  7. Return chicken to the pan and toss to coat in the sauce. Drizzle with sesame oil and sprinkle with red pepper flakes. Garnish with green onions and serve immediately.

Notes

Ensure chicken is completely dry before searing for the best crust. Do not overcrowd the pan; cook in batches if necessary. If the sauce breaks, reduce heat and whisk vigorously. Ensure internal temperature reaches 165°F (74°C).
