  • 4 oz (115g) bittersweet or semi-sweet chocolate, chopped
  • 1/2 cup (100g) granulated sugar
  • 2 large eggs, room temperature
  • 2 large egg yolks, room temperature
  • 1/4 cup (30g) all-purpose flour, sifted
  • 2 tablespoons unsweetened cocoa powder
  • 1 teaspoon espresso powder (optional)
  • Pinch of salt
  • Powdered sugar, for dusting (optional)
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 425°F (220°C). Butter four 6-ounce ramekins thoroughly and dust with cocoa powder to prevent sticking. Set aside.
  2. Melt the butter and chocolate together gently over a double boiler or in short bursts in the microwave (about 30 seconds at a time), stirring until smooth. Let it cool slightly.
  3. In a mixing bowl, whisk together the eggs, egg yolks, and granulated sugar until thick, pale, and slightly frothy—about 3-4 minutes.
  4. Stir in the vanilla extract and espresso powder (if using) to the egg mixture.
  5. Fold the melted chocolate mixture gently into the eggs using a spatula, combining well but not overmixing.
  6. Sift in the flour, cocoa powder, and salt over the batter, then carefully fold in until just combined. The batter should be thick but smooth.
  7. Divide the batter evenly among the prepared ramekins, filling no more than 3/4 full.
  8. Bake in the preheated oven for 12-14 minutes until edges are set and firm but the center is soft and slightly jiggly.
  9. Remove from oven and let cakes sit for 1 minute. Run a knife around edges to loosen, then invert onto plates.
  10. Dust with powdered sugar or serve immediately with fresh berries or vanilla ice cream.
