Instructions

  1. Prep your sauces: In separate small bowls, whisk together each sauce’s ingredients and refrigerate to let flavors meld.
  2. Divide the ground beef into 8 equal portions, loosely roll each into a ball about 3 ounces (85 g).
  3. Preheat a cast iron skillet or heavy-duty non-stick pan over medium-high heat until very hot (about 400°F). Add a thin layer of vegetable oil and let it shimmer.
  4. Place one beef ball in the pan, immediately press down firmly with a metal spatula until about 1/4 inch thick. Hold pressure for 10 seconds. Season the exposed side with salt and pepper. Repeat for remaining patties, cooking in batches if needed.
  5. Cook patties without moving for 3-4 minutes until a deep golden crust forms and edges are crisp.
  6. Flip patties carefully, immediately place a cheese slice on each, and cook for 1-2 minutes until cheese melts and burger is cooked through but juicy.
  7. While the second side cooks, spread softened butter on buns and toast face down in a separate pan or under a broiler until golden.
