Instructions

  1. Preheat oven to 400°F (200°C). Pierce sweet potatoes with a fork and bake directly on the rack for 45-60 minutes until tender. Let cool until handleable.
  2. Peel the skins off the baked sweet potatoes and place the flesh in a large bowl. Add melted butter and mash until smooth and velvety. Avoid overmixing to prevent a gummy texture.
  3. While potatoes cool, toast pecan halves in a skillet over medium heat for 3-4 minutes, stirring frequently, until fragrant. Remove from heat and let cool slightly, then chop roughly.
