These crispy make-ahead turkey club pinwheels are perfect party snacks featuring layers of turkey, bacon, lettuce, tomato, and a creamy mayo-mustard spread, baked to golden perfection.

Ingredients

  • Large flour tortillas (10-inch size)
  • Deli turkey slices (about 8 ounces, thinly sliced, oven-roasted preferred)
  • Cooked bacon strips (6 strips, crisped and drained; turkey bacon optional)
  • Leaf lettuce (romaine or butter lettuce)
  • Ripe tomatoes (1-2 medium, thinly sliced; Roma tomatoes recommended)
  • Mayonnaise (ยฝ cup)
  • Dijon mustard (1 tablespoon)
  • Shredded cheddar cheese (1 cup, optional)
  • Salt and freshly ground black pepper (to taste)
  • Optional extras: sliced avocado, pickles, or hot sauce

Instructions

  1. Preheat your oven to 375ยฐF (190ยฐC). Line a baking sheet with parchment paper or a silicone mat.
  2. In a mixing bowl, whisk together ยฝ cup mayonnaise and 1 tablespoon Dijon mustard until smooth and creamy.
  3. Place one tortilla flat on a clean surface. Spread a thin, even layer of the mayo-mustard mixture over the entire surface, leaving about a ยฝ-inch border.
  4. Arrange turkey slices evenly over the spread, covering the tortilla but not piling too thickly.
  5. Place the crisp bacon strips on top of the turkey.
  6. Add leaf lettuce leaves and thin tomato slices, patting tomatoes dry if juicy.
  7. Sprinkle shredded cheddar cheese evenly over the top if using.
  8. Carefully roll the tortilla into a tight log, pressing gently to keep everything snug. Repeat with remaining tortillas.
  9. Wrap the rolled tortillas tightly in plastic wrap and refrigerate for at least 30 minutes.
  10. Remove plastic wrap and cut each roll into 1-inch slices. Arrange pinwheels cut side up on the prepared baking sheet, spacing about 1 inch apart.
  11. Bake for 12-15 minutes until edges turn golden and crispy, watching closely to avoid burning.
  12. Let pinwheels cool for a few minutes on the sheet before transferring to a serving platter. Serve warm or at room temperature.

Notes

Use thin 10-inch tortillas for easy rolling. Pat tomatoes and lettuce dry to avoid sogginess. Chill rolls before slicing to hold shape. Watch oven closely to prevent burning. Pinwheels can be assembled and frozen unbaked; bake from frozen adding a few extra minutes.
