These crispy garlic parmesan green bean bundles are a quick and easy side dish that combines tender-crisp green beans, smoky bacon, garlic butter, and salty parmesan for an addictive flavor that makes vegetables feel indulgent.

Ingredients

Scale
  • 1 pound fresh green beans, trimmed
  • 8 slices regular-cut bacon
  • 3 tablespoons unsalted butter, melted
  • 4 cloves garlic, minced
  • 1/3 cup freshly grated Parmesan cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a rimmed baking sheet with parchment paper or aluminum foil. Bring a large pot of salted water to a boil.
  2. Wash the green beans and trim off the stem ends.
  3. Blanch the green beans in the boiling water for exactly 2 minutes. Transfer to a bowl of ice water for 2 minutes, then drain and pat completely dry with paper towels.
  4. In a small bowl, combine melted butter, minced garlic, salt, pepper, and red pepper flakes (if using). Stir until well combined.
  5. Divide the blanched green beans into 8 equal portions (about 8-10 beans each). Wrap one slice of bacon around the middle of each bundle, overlapping the ends slightly on the bottom. Place seam-side down on the prepared baking sheet.
  6. Brush each bundle generously with the garlic butter mixture.
  7. Evenly distribute the grated Parmesan cheese over the tops of the bundles.
  8. Bake for 15-18 minutes, until bacon is crispy and Parmesan is golden brown. For extra crispiness, broil for the last 1-2 minutes, watching carefully.
  9. Remove from oven and let rest on the baking sheet for 2-3 minutes. Sprinkle with fresh chopped parsley before serving.

Notes

Don’t skip blanching the green beans; it ensures they cook through. Pat beans completely dry to avoid soggy bacon. Watch the broiler closely to prevent burning. Use room temperature butter for even spreading. Make extra garlic butter for drizzling over rice or pasta.
