  • 1 cup finely grated Parmesan cheese (about 100 g)
  • 4 cloves garlic, minced
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons softened butter
  • 1 teaspoon dried Italian herbs (oregano, basil, thyme blend)
  • Salt and freshly ground black pepper, to taste
  • 1/4 cup all-purpose flour (about 30 g)
  • Optional: chopped fresh parsley for garnish

Instructions

  1. Prepare the garlic butter sauce by whisking together 2 tablespoons softened butter, 4 cloves minced garlic, 1 teaspoon dried Italian herbs, and a pinch of salt and pepper in a small bowl.
  2. Pat the chicken thighs dry with paper towels and season both sides liberally with salt and freshly ground black pepper.
  3. Place 1/4 cup all-purpose flour in a shallow dish. Lightly dredge each chicken thigh in the flour, shaking off excess, then press each piece into the grated Parmesan cheese to coat thoroughly.
  4. Heat 2 tablespoons olive oil in a large skillet over medium-high heat until shimmering but not smoking.
  5. Add the chicken thighs in a single layer without crowding. Cook undisturbed for 4-5 minutes until the first side is golden and crispy.
  6. Flip the chicken and cook another 4-5 minutes until the other side is golden and the internal temperature reaches 165°F (74°C).
  7. During the last 2 minutes of cooking, brush the garlic butter sauce generously over the chicken thighs.
  8. Remove the chicken from the pan and let rest for 3-5 minutes. Garnish with chopped fresh parsley if desired before serving.

Notes

Dry the chicken thighs thoroughly before coating to ensure a crispy crust. Press the Parmesan cheese firmly onto the chicken to help it stick during cooking. If the Parmesan browns too quickly before the chicken is cooked through, reduce heat and cover loosely to finish cooking. Rest the chicken after cooking to keep it juicy. For gluten-free, substitute all-purpose flour with almond flour or gluten-free baking mix. For dairy-free, use olive oil instead of butter and a dairy-free Parmesan substitute or nutritional yeast.
