Instructions

  1. Prep the Corn: Shuck the ears and remove kernels from about 4 fresh ears of corn to yield roughly 3 cups. Pat dry if kernels are very juicy. (About 10 minutes)
  2. Mix Dry Ingredients: In a large bowl, whisk together flour, baking powder, sugar, and salt until combined. (2 minutes)
  3. Combine Wet Ingredients: In a separate bowl, whisk egg, milk, and melted butter until smooth. (2 minutes)
  4. Make the Batter: Pour wet ingredients into dry ingredients and stir gently until just combined. Batter should be thick and lumpy. (2-3 minutes)
