  • 1 pound (450g) salmon fillets, skinless and boneless, cut into bite-sized chunks
  • 2 tablespoons everything bagel seasoning
  • 1/2 cup (50g) panko breadcrumbs
  • 1 tablespoon olive oil
  • Juice and zest of 1 medium lemon
  • 1/2 cup (120g) plain full-fat Greek yogurt
  • 1 tablespoon fresh dill, finely chopped (or 1 teaspoon dried dill)
  • 1/4 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Rinse and pat dry 1 pound (450g) of salmon fillets. Cut into roughly 1-inch (2.5 cm) cubes.
  2. In a medium bowl, combine 2 tablespoons of everything bagel seasoning and 1/2 cup (50g) panko breadcrumbs. Add 1 tablespoon olive oil and stir until the mixture is evenly moistened.
  3. Toss the salmon pieces gently in the breadcrumb mixture until well coated.
  4. Preheat the air fryer to 400°F (200°C) for about 3 minutes.
  5. Arrange the coated salmon in a single layer in the air fryer basket. Cook for 8-10 minutes, shaking the basket halfway through for even browning, until golden brown and the internal temperature reaches 145°F (63°C).
  6. While the salmon cooks, whisk together 1/2 cup (120g) plain Greek yogurt, juice and zest of 1 lemon, 1 tablespoon fresh dill, 1/4 teaspoon garlic powder, and salt and pepper to taste.
  7. Serve the salmon bites immediately with the lemon dill sauce for dipping. Garnish with extra dill or lemon wedges if desired.

Notes

Pat salmon dry before coating to help crumbs stick and crisp. Do not overcrowd the air fryer basket to avoid steaming. Shake basket halfway through cooking for even crispiness. The lemon dill sauce is best made fresh but can be prepared ahead and stirred before serving. For gluten-free, use gluten-free panko or almond meal. For vegan variation, substitute salmon with firm tofu and use vegan yogurt.
