These creamy roasted garlic mashed potatoes are the ultimate comfort food side dish. Sweet, nutty roasted garlic is mashed into buttery Yukon Gold potatoes for a velvety smooth texture that will have everyone asking for seconds.

Ingredients

Scale
  • 2 whole heads of garlic
  • 2 tablespoons olive oil
  • Pinch of salt
  • 3 pounds Yukon Gold potatoes
  • 6 tablespoons unsalted butter, softened
  • 1 cup whole milk, warmed
  • 1 teaspoon salt
  • ½ teaspoon black pepper, freshly ground
  • 2 tablespoons fresh chives, chopped (optional)

Instructions

  1. Preheat oven to 400°F (200°C). Cut the top off each head of garlic, about ¼ inch from the top, exposing the cloves. Place each head on a piece of aluminum foil, drizzle with olive oil, and sprinkle with a pinch of salt. Wrap the foil tightly around each head and place on a baking sheet. Roast for 40-45 minutes, until the cloves are soft and golden. Let cool, then squeeze the soft garlic out of the skins. Set aside.
  2. While the garlic roasts, peel the potatoes and cut them into 1-inch chunks. Rinse in cold water to remove excess starch.
  3. Place potato chunks in a large pot and cover with cold water by about an inch. Add a generous pinch of salt. Bring to a boil over high heat, then reduce to a simmer. Cook for 15-20 minutes, until fork-tender.
  4. While potatoes cook, warm the milk and butter together in a small saucepan over low heat until warm but not boiling.
  5. Drain potatoes in a colander and return to the pot. Place the pot back on the stove over low heat for about a minute, shaking occasionally, to evaporate excess moisture.
  6. Remove pot from heat. Add roasted garlic cloves and mash with a potato masher or ricer until garlic is fully incorporated and potatoes are broken down.
  7. Pour warm milk and butter mixture over the potatoes. Fold gently with a spatula or wooden spoon until just combined. Season with salt and pepper to taste.
  8. Transfer to a serving bowl, garnish with fresh chives if using, and serve immediately.

Notes

Roast garlic up to 3 days ahead and store in the fridge. Warm dairy before adding to potatoes to prevent gumminess. Don’t overwork the potatoes to avoid a gluey texture. For extra richness, substitute half-and-half for whole milk.
