  • ½ cup (50g) rolled oats (old-fashioned oats)
  • ½ cup (120ml) milk of choice (whole milk, oat milk, or almond milk)
  • ¼ cup (60g) plain Greek yogurt (full-fat or dairy-free coconut yogurt for vegan)
  • 1 tablespoon chia seeds
  • 12 tablespoons honey or maple syrup
  • ½ teaspoon vanilla extract
  • Pinch of salt
  • 1 medium ripe banana
  • 2 tablespoons creamy peanut butter (natural preferred)
  • Optional toppings: sliced banana, extra peanut butter drizzle, dark chocolate chips, chopped peanuts, cinnamon, whipped cream

Instructions

  1. Mash half of the ripe banana in a small bowl with a fork until mostly smooth with a few small lumps. Reserve the other half for topping.
  2. In a mason jar, combine rolled oats, milk, Greek yogurt, chia seeds, honey or maple syrup, vanilla extract, and salt. Stir until oats are fully coated and no dry spots remain.
  3. Spoon the mashed banana into the jar and stir into the oat mixture until evenly distributed.
  4. Add peanut butter on top and gently swirl it in, leaving ribbons visible for pockets of flavor.
  5. Layer the remaining sliced banana on top, pressing gently into the surface. Add any optional toppings (chocolate chips, chopped peanuts, cinnamon, extra peanut butter drizzle).
  6. Seal the jar tightly and refrigerate for at least 6 hours, preferably overnight (8-12 hours).
  7. In the morning, stir the oats well. If too thick, add a splash of milk. Enjoy cold or microwave for 30-60 seconds for warm oats.

Notes

Use rolled oats, not quick or steel-cut oats. The riper the banana, the sweeter the oats. For best texture, let the oats sit overnight. If the oats are too thick in the morning, stir in a splash of milk. The banana slices on top may darken after a day or two—this is normal oxidation and safe to eat.
