This Creamy Marry Me Chicken Soup takes all the flavors of the famous chicken dishโ€”garlic, parmesan, cream, and sun-dried tomatoesโ€”and makes them even more comforting in soup form. It’s a quick, one-pot meal that comes together in about 40 minutes and is perfect for busy weeknights.

Ingredients

Scale
  • 2 tablespoons unsalted butter
  • 1 medium yellow onion, diced (about 1 cup)
  • 4 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes in oil, drained and chopped
  • 1/4 cup all-purpose flour
  • 4 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated parmesan cheese (freshly grated)
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and black pepper to taste
  • 1 1/2 pounds boneless, skinless chicken breasts (about 2 large breasts)
  • 2 cups dried small pasta (like ditalini, elbow macaroni, or orzo)
  • Fresh parsley or basil, chopped, for garnish

Instructions

  1. Melt the butter in a large pot over medium heat. Add the diced onion and cook for 4-5 minutes, until soft and translucent. Add the minced garlic and cook for another minute until fragrant.
  2. Stir in the chopped sun-dried tomatoes and cook for 2 minutes to release their flavor.
  3. Sprinkle the flour over the vegetables and stir constantly for 1-2 minutes to cook out the raw flour taste.
  4. Slowly pour in the chicken broth while whisking to prevent lumps. Bring to a gentle simmer. Season with oregano, red pepper flakes, and a pinch of salt and pepper. Nestle the chicken breasts into the liquid. Reduce heat to low, cover, and simmer for 15-18 minutes, until chicken is cooked through (165ยฐF internally).
  5. While the chicken simmers, bring a separate pot of salted water to a boil. Cook the pasta according to package directions until al dente. Drain and set aside (do not rinse).
  6. Using tongs, transfer the cooked chicken to a cutting board. Let rest for a couple of minutes, then shred into bite-sized pieces using two forks.
  7. Return the shredded chicken to the pot. Stir in the heavy cream and cooked pasta. Let simmer for 2-3 minutes until heated through and slightly thickened.
  8. Remove the pot from the heat. Stir in the grated parmesan cheese until completely melted. Taste and adjust salt and pepper.
  9. Serve immediately, garnished with fresh parsley or basil and extra parmesan if desired.

Notes

For best results, grate your own parmesan cheese and cook the pasta separately to avoid mushiness. If the soup is too thick after adding pasta, stir in extra chicken broth or milk. To prevent curdling, remove the pot from heat before adding cream and cheese. Leftovers can be stored in the refrigerator for up to 4 days; the soup will thicken as it sits, so add a splash of broth when reheating. Freeze the soup base without pasta for best results.
