  • 4 boneless, skinless chicken breasts (about 6 oz / 170 g each)
  • Salt and black pepper, to taste
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter, chilled
  • 3 garlic cloves, minced
  • 1/3 cup chopped sun-dried tomatoes (packed in oil, drained lightly)
  • 1/2 cup chicken broth (120 ml)
  • 3/4 cup heavy cream (180 ml)
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons fresh basil, chopped (optional)
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/4 cup white wine (60 ml, optional)

Instructions

  1. Pat the chicken breasts dry with paper towels and season both sides generously with salt and black pepper. (5 minutes)
  2. Heat the olive oil and butter together in a skillet over medium-high heat until the butter is melted and starts to foam. (2 minutes)
  3. Add the chicken breasts to the pan, leaving space between each piece. Cook without moving for 5-6 minutes until golden brown on the bottom. Flip and cook the other side for another 5 minutes or until internal temperature reaches 165°F (74°C). For thicker pieces, cover loosely with foil and reduce heat to medium to finish cooking. (10-12 minutes total)
  4. Remove chicken from pan and set aside on a warm plate, tented with foil.
  5. Lower heat to medium and add minced garlic and chopped sun-dried tomatoes. Stir constantly for about 1 minute until fragrant.
  6. Pour in white wine (if using) to deglaze the pan, scraping up browned bits. Let wine reduce by half, about 2-3 minutes.
  7. Add chicken broth and heavy cream, stirring to combine. Bring to a gentle simmer, then stir in grated Parmesan cheese until melted and smooth. If sauce is too thick, add more broth or cream. (3-5 minutes)
  8. Season sauce with red pepper flakes (if using) and adjust salt and pepper to taste. Toss in fresh basil just before serving.
  9. Return chicken breasts to the pan, spooning sauce over them. Warm together for 2 minutes to meld flavors.
  10. Serve immediately with extra sauce and sun-dried tomatoes on top.

Do not crowd the pan to ensure a good sear. Dry chicken before seasoning for better texture. Keep heat moderate when adding cream to avoid curdling.
