  • 1 cup buffalo wing sauce (e.g., Frank’s RedHot)
  • 1/2 cup creamy ranch dressing
  • 2 tablespoons unsalted butter, melted
  • 1 cup sharp cheddar cheese, shredded
  • 1 cup low-moisture mozzarella cheese, shredded
  • 2 cups cooked chicken breast, shredded
  • 2 stalks green onions, thinly sliced
  • 1 tablespoon ranch dressing (for drizzle)

Instructions

  1. If using raw chicken, season with salt and pepper, boil, and simmer for 15-20 minutes until cooked. Cool and shred into bite-sized pieces (yields approx. 2 cups).
  2. Soften cream cheese at room temperature for 30 minutes or microwave in 15-second intervals until soft but not melted.
  3. In a large mixing bowl, combine softened cream cheese, buffalo sauce, ranch dressing, and melted butter. Beat with a hand mixer on medium speed until smooth and uniform.
  4. Fold in half of the shredded cheddar and mozzarella cheese, then add the shredded chicken and mix until evenly distributed. Fold in the remaining cheese.
  5. Preheat oven to 350°F (175°C). Transfer mixture to a 9×9 inch baking dish and spread evenly.
  6. Bake for 20-25 minutes until bubbly around the edges and lightly golden on top. Optionally broil for 2 minutes for a crispier top.
  7. Remove from oven and let rest for 5 minutes to set. Garnish with sliced green onions and a drizzle of ranch dressing. Serve warm.
