Creamy Kid-Friendly Chicken Salad Croissants

A quick and easy creamy chicken salad served in flaky croissants, perfect for kid-friendly lunches and casual family meals.

  • 2 cups (about 300g) cooked chicken breast, shredded or diced (leftover rotisserie chicken works great)
  • ½ cup (120ml) mayonnaise (Hellmann’s recommended)
  • 2 medium celery stalks, finely chopped
  • ½ cup (75g) red grapes, halved (optional)
  • 2 small green onions, thinly sliced
  • 1 tablespoon (15ml) freshly squeezed lemon juice
  • Salt and black pepper to taste
  • 6 large or 12 mini croissants (fresh bakery-style preferred)
  • Optional add-ins: chopped walnuts, dried cranberries, or a pinch of paprika

Instructions

  1. Shred or dice cooked chicken breast into bite-sized pieces (about 2 cups / 300g). This should take about 5 minutes.
  2. Finely chop 2 celery stalks, halve ½ cup (75g) of red grapes, and thinly slice 2 green onions. Keep these ready in a small bowl.
  3. In a medium mixing bowl, combine ½ cup (120ml) mayonnaise with 1 tablespoon (15ml) fresh lemon juice. Stir gently to combine.
  4. Add the shredded chicken, chopped celery, grapes, and green onions to the bowl with the mayo mixture. Stir gently with a spatula until everything is evenly coated, being careful not to mash the grapes or chicken too much.
  5. Add salt and black pepper to taste. Start with ½ teaspoon salt and a few grinds of pepper, then adjust as needed.
  6. Slice 6 large or 12 mini croissants horizontally, leaving a hinge to keep the filling in place. Toast lightly if desired.
  7. Spoon a generous amount of chicken salad into each croissant, pressing lightly to fill but not overstuff. Serve immediately or cover and chill if serving later.

Notes

For a dairy-free version, use vegan mayonnaise and dairy-free croissants. To lighten the salad, swap half the mayo with plain Greek yogurt. Toast croissants lightly for added crunch. Assemble croissants just before serving to avoid sogginess. Store chicken salad separately in an airtight container for up to 2 days.
