  • 1/2 cup granulated sugar
  • 1 large cinnamon stick (or 1 tsp ground cinnamon)
  • 1 1/2 tsp vanilla extract
  • 2 tbsp fresh lemon juice
  • Pinch of salt
  • Optional: pinch of ground nutmeg
  • Optional: 1 tbsp unsalted butter, softened

Instructions

  1. Peel the peaches using a paring knife or blanch them in boiling water for 30 seconds, then plunge into ice water. Pit and chop into roughly 1-inch pieces (about 10 minutes).
  2. Transfer chopped peaches to a large heavy-bottomed saucepan. Add sugar, cinnamon stick, and a pinch of salt. Stir to combine.
  3. Cook over medium heat, stirring occasionally, until peaches release their juices and mixture begins to simmer (about 15 minutes).
  4. Lower heat to medium-low and cook gently, stirring every few minutes to prevent sticking, until thickened to a jammy consistency (25-30 minutes). Add a tablespoon of water if it starts to stick.
  5. Remove cinnamon stick. Stir in vanilla extract and lemon juice. Taste and adjust sweetness if needed.
  6. Puree the mixture until silky smooth using an immersion blender or regular blender in batches (cool slightly before blending).
  7. Optional: Stir in softened butter until melted and combined for extra creaminess.
  8. Let peach butter cool to room temperature, then transfer to sterilized glass jars. Store in refrigerator up to two weeks or freeze for longer storage.

Notes

Peach butter thickens further as it cools; pulse blend less for chunkier texture. Use ripe but not overripe peaches for best flavor. Store in sterilized jars and refrigerate. Can freeze in small portions. When blending hot mixture, leave blender lid slightly ajar and cover with towel to avoid splashes.
