  • 1/2 medium red onion, thinly sliced
  • 1 cup full-fat sour cream
  • 2 tablespoons heavy cream
  • 2 tablespoons white vinegar
  • 1 tablespoon granulated sugar
  • 1 teaspoon Dijon mustard
  • 1/2 cup fresh dill, chopped
  • 1 teaspoon kosher salt (for salting cucumbers)
  • 1/2 teaspoon black pepper
  • Additional salt to taste

Instructions

  1. Wash cucumbers and slice into 1/4 inch half-moons. Place in a large bowl and sprinkle with 1 teaspoon kosher salt. Toss to coat and let sit for 15-20 minutes to draw out moisture.
  2. Line a colander with cheesecloth or a clean kitchen towel. Pour the cucumbers and their liquid into the colander. Gather the cloth and squeeze tightly over the sink to remove as much liquid as possible. Discard the liquid.
  3. While cucumbers drain, thinly slice the red onion. If desired, soak slices in ice water for 10 minutes to mellow the flavor, then drain and pat dry.
  4. In a small bowl, whisk together sour cream, heavy cream, white vinegar, sugar, Dijon mustard, and black pepper until smooth and creamy.
  5. Combine the drained cucumbers and prepared red onion in the large mixing bowl. Pour the dressing over the top and add the chopped fresh dill.
  6. Gently toss everything together to coat evenly. Cover and refrigerate for at least 30 minutes to allow flavors to meld before serving cold.

Notes

Do not skip the salting and draining step; it is crucial for preventing a watery salad. Use fresh dill for the best flavor, as dried dill lacks the necessary brightness. The salad tastes better after chilling for a few hours. Store in an airtight container in the refrigerator for up to 3 days.
