  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • A handful fresh basil or parsley, chopped

Instructions

  1. Pat the chicken breasts dry with paper towels and season both sides with salt and pepper.
  2. In a medium mixing bowl, whisk together heavy cream, chicken broth, grated Parmesan cheese, Italian seasoning, red pepper flakes (if using), and minced garlic until smooth and creamy.
  3. Place the chicken breasts at the bottom of the crockpot. Scatter the chopped sun-dried tomatoes evenly on top.
  4. Pour the creamy sauce mixture over the chicken and tomatoes.
  5. Cover and cook on low for 4 to 5 hours until the chicken is tender and reaches an internal temperature of 165°F (74°C).
  6. If the sauce is too thin, remove the chicken and stir in 1 tablespoon cornstarch mixed with 2 tablespoons cold water into the crockpot. Cook uncovered on high for 10-15 minutes until thickened.
  7. Sprinkle freshly chopped basil or parsley over the top before serving.
  8. Serve hot over pasta, rice, mashed potatoes, or your preferred base.

Notes

Use oil-packed sun-dried tomatoes for richer flavor or rehydrate dry-packed tomatoes in warm water before chopping. Fresh garlic and good-quality Parmesan cheese improve flavor. If sauce is too thin, thicken with cornstarch slurry. Can substitute half-and-half for a lighter sauce or Greek yogurt for a tangier dairy-free option. Chicken thighs can be used but may require adjusted cooking time. Avoid cooking on high for extended periods to prevent drying out.
