Instructions

  1. Crack 4 large eggs into a medium mixing bowl. Add ½ cup of small-curd cottage cheese. Use a whisk or fork to beat together until well combined but still a bit lumpy (about 2 minutes).
  2. Place your non-stick skillet over medium-low heat. Add 1 tablespoon of unsalted butter, swirling it around until melted and slightly foamy (1-2 minutes).
  3. Pour the egg and cottage cheese mixture into the skillet. Let it sit undisturbed for about 20 seconds until the edges start to set.
  4. Using a silicone spatula, gently fold the eggs from the edges toward the center every 15-20 seconds. The eggs should form soft curds but still look slightly wet (3-4 minutes).
  5. When the eggs are almost cooked through but still creamy and shiny, sprinkle 1 teaspoon of everything bagel seasoning evenly over the top. Add salt and freshly ground black pepper to taste. Fold lightly to incorporate (about 30 seconds).
  6. Immediately transfer the eggs to a warm plate to stop cooking. The residual heat will finish them off perfectly without drying out.
