A quick and easy slow cooker white chicken chili that is creamy, tangy, and comforting. Made with simple pantry staples like chicken, white beans, and cream cheese, this dish is perfect for busy weeknights or potlucks.

  • 1.5 lbs boneless skinless chicken breasts
  • 2 cans (15 oz each) white beans (cannellini or great northern), rinsed and drained
  • 1 can (4 oz) diced green chiles, undrained
  • 32 oz (4 cups) low-sodium chicken broth
  • 1 cup frozen or canned corn
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 8 oz cream cheese, softened and cubed
  • 1 tablespoon fresh lime juice
  • 1/4 cup chopped fresh cilantro
  • Salt and black pepper to taste

Instructions

  1. Cut chicken breasts into 1.5-inch cubes and place in the bottom of a 4- to 6-quart slow cooker.
  2. Sprinkle diced onion and minced garlic over the chicken.
  3. Pour in chicken broth, undrained green chiles, rinsed white beans, and corn.
  4. Add cumin, chili powder, salt, and pepper. Stir gently to combine.
  5. Cover and cook on LOW for 4 to 6 hours until chicken is tender.
  6. Remove chicken, shred with two forks, and return to the pot.
  7. Add softened cream cheese and stir continuously until completely melted and incorporated.
  8. Stir in fresh lime juice and adjust seasoning with salt and pepper if needed.
  9. Serve hot, garnished with fresh cilantro, sour cream, and tortilla chips.

Notes

Add cream cheese during the last 15-20 minutes of cooking to prevent separation. Stir well to ensure a smooth texture. For a thinner chili, mash some beans against the pot side. Can be frozen for up to 3 months.
