Perfectly crunchy, deeply flavorful roasted pumpkin seeds with a warm spice blend and a touch of sea salt. A quick and easy fall snack that’s perfect for gatherings or cozy nights in.

Ingredients

Scale
  • 1 ½ cups fresh pumpkin seeds (from a medium carving pumpkin)
  • 2 cups water
  • 1 ½ teaspoons sea salt (for boiling)
  • 1 tablespoon extra virgin olive oil
  • ½ teaspoon ground cumin
  • ½ teaspoon smoked paprika
  • ¼ teaspoon garlic powder
  • ⅛ teaspoon cayenne pepper (optional, for gentle warmth)
  • Flaky sea salt (for finishing, e.g., Maldon)
  • Optional: 1 teaspoon finely chopped fresh rosemary or thyme (after roasting)

Instructions

  1. Preheat oven to 350°F (175°C). Line a rimmed baking sheet with parchment paper.
  2. Scoop seeds and pulp from pumpkin. Rinse in a colander under cool water, separating seeds from large pulp chunks (a little pulp is fine).
  3. In a medium saucepan, bring 2 cups water to a boil. Add 1 ½ teaspoons sea salt and stir to dissolve. Add rinsed seeds and boil for exactly 10 minutes.
  4. Drain seeds in colander. Spread on a clean kitchen towel and pat very dry. Let air dry for about 5 minutes.
  5. Transfer dried seeds to a mixing bowl. Drizzle with olive oil and add cumin, smoked paprika, garlic powder, and cayenne. Toss until evenly coated.
  6. Spread seasoned seeds in a single layer on prepared baking sheet. Roast for 10 minutes, then shake the pan to redistribute. Roast for another 10–15 minutes, until golden brown and fragrant. Watch closely in the last 5 minutes.
  7. Remove from oven and let cool completely on the sheet (they will crisp as they cool). Sprinkle with flaky sea salt before serving.

Notes

Boiling the seeds is essential for even crunch. Dry seeds thoroughly after boiling to avoid steaming. Watch the oven closely in the last 5 minutes to prevent burning. Let seeds cool completely for maximum crunch. Store in an airtight container at room temperature for up to 2 weeks, or freeze for up to 3 months.
