A creamy, savory pumpkin coconut soup made with just four main ingredients in the slow cooker. This happy accident turned into a fall favorite that’s vegan, gluten-free, and incredibly easy to prepare.

Ingredients

Scale
  • 1 can (15 oz) pumpkin puree (not pumpkin pie filling)
  • 1 can (13.5 oz) full-fat coconut milk
  • 2 cups vegetable broth (low-sodium preferred)
  • 1 small onion, diced (about 1 cup)
  • 2 cloves garlic, minced
  • 1 teaspoon ground ginger
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon salt (fine sea salt)
  • 1/4 teaspoon black pepper (freshly ground)
  • Optional garnish: toasted pumpkin seeds, extra coconut milk, fresh cilantro, red pepper flakes

Instructions

  1. Dice the onion and mince the garlic.
  2. Add pumpkin puree, coconut milk, vegetable broth, diced onion, minced garlic, ground ginger, ground cumin, salt, and pepper to the slow cooker. Stir until well combined.
  3. Cook on low for 6-8 hours or on high for 3-4 hours.
  4. Use an immersion blender to puree the soup directly in the slow cooker until smooth (30-60 seconds). If using a regular blender, let soup cool for 10 minutes, then blend in batches, filling no more than halfway.
  5. Taste and adjust seasoning with additional salt, pepper, or ginger as needed. If too thick, stir in more broth or water.
  6. Ladle into bowls and garnish with a drizzle of coconut milk, toasted pumpkin seeds, and fresh cilantro if desired.

Notes

This soup tastes even better the next day as flavors meld. For a thicker soup, reduce broth to 1 1/2 cups or stir in 2 tablespoons coconut flour during the last 30 minutes. To make on the stovetop, sauté onion and garlic in oil, add remaining ingredients, simmer 20-25 minutes, then blend.
