A comforting, creamy chili made with chicken, pumpkin puree, and beans in a slow cooker. This easy ‘dump-and-go’ recipe delivers rich flavor and velvety texture without heavy cream.

  • 1 (15-ounce) can pumpkin puree (not pie filling)
  • 1 medium yellow onion, diced
  • 1 red bell pepper, diced
  • 3 cloves garlic, minced
  • 1 (15-ounce) can black beans, rinsed and drained
  • 1 (15-ounce) can kidney beans, rinsed and drained
  • 1 (14.5-ounce) can diced tomatoes, undrained
  • 1 (32-ounce) carton low-sodium chicken broth
  • 2 teaspoons ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon garlic powder
  • 1 teaspoon kosher salt
  • 0.5 teaspoon black pepper
  • Optional toppings: Shredded cheddar cheese, sour cream, fresh cilantro, lime wedges

Instructions

  1. Prep the vegetables: Peel and dice the yellow onion, core and dice the red bell pepper, and mince the garlic.
  2. Prepare the chicken: Pat chicken breasts dry and cut into 1-inch cubes. Place in the slow cooker insert.
  3. Rinse the beans: Rinse black and kidney beans under cold water until foaming stops. Add to the slow cooker.
  4. Add wet ingredients: Pour in diced tomatoes with juices and chicken broth. Stir gently to combine.
  5. Season: Sprinkle cumin, chili powder, smoked paprika, garlic powder, salt, and pepper over the mixture. Do not stir yet.
  6. Add pumpkin: Scoop in the pumpkin puree and stir everything together until the mixture is a creamy orange color.
  7. Cook: Cover and cook on Low for 6-7 hours (or High for 3-4 hours).
  8. Shred chicken: Check that chicken is cooked through. Shred with forks or leave as cubes.
  9. Thicken (Optional): If too thin, cook uncovered for 30 minutes or stir in a cornstarch slurry and cook 15 more minutes.
  10. Serve: Ladle into bowls and top with cheese, sour cream, cilantro, and lime juice.

Notes

Ensure you use pure pumpkin puree, not pumpkin pie filling. Rinse beans thoroughly to reduce sodium and starch. For best texture, cook on Low rather than High. The chili thickens as it sits; add broth when reheating if needed.
