Cozy Slow Cooker Christmas Morning Cinnamon Roll Casserole

A stress-free, comforting breakfast casserole made with pre-made cinnamon rolls or bread, layered with a rich cream cheese filling and cinnamon butter, then slow-cooked to perfection. It offers the taste of homemade cinnamon rolls with the convenience of overnight preparation.

  • 1 tube (approx. 12-16 rolls) refrigerated cinnamon rolls OR 1 loaf soft cinnamon-swirled bread (brioche-style)
  • 1/2 cup unsalted butter, melted
  • 1 cup packed brown sugar (divided)
  • 2 teaspoons ground cinnamon
  • 8 oz full-fat block cream cheese, softened
  • 1 teaspoon vanilla extract (divided)
  • 1 cup milk or heavy cream (for custard base)
  • 1 cup confectioners’ sugar (for glaze)
  • 23 tablespoons milk or heavy cream (for glaze consistency)
  • 1/2 cup chopped pecans or walnuts (optional)

Instructions

  1. Generously grease the inside of a 4-6 quart slow cooker insert with butter or non-stick cooking spray.
  2. If using pre-made rolls, separate them. If using bread, slice into 1-inch cubes. You need roughly 8-10 cups of bread pieces.
  3. In a medium bowl, beat the softened cream cheese until smooth. Add 1/2 cup brown sugar and 1/2 teaspoon vanilla. Mix until well combined.
  4. In a separate bowl, mix the melted butter with the remaining 1/2 cup brown sugar and ground cinnamon until it resembles wet sand.
  5. Place half of the bread pieces into the slow cooker. Spread half of the cream cheese filling over the bread. Sprinkle half of the cinnamon butter mixture on top.
  6. Repeat layers with remaining bread, cream cheese, and cinnamon butter. Ensure the top layer is covered with the cinnamon butter.
  7. In a large jug, whisk together the milk (or cream) and remaining 1/2 teaspoon vanilla. Pour evenly over the layered bread.
  8. Cover and cook on LOW for 3 to 4 hours, until the top is golden brown and the center is set but slightly jiggly.
  9. While cooking, whisk confectioners’ sugar with 2-3 tablespoons milk/cream to create a drizzling glaze.
  10. Once cooked, let rest for 5 minutes. Drizzle with glaze and serve warm.

Notes

Ensure cream cheese and butter are at room temperature for smooth mixing. Do not cook on HIGH to prevent burning. If the top browns too quickly, cover with aluminum foil. For a firmer texture, reduce milk by half a cup; for softer, add an extra egg to the milk mixture.
