Ingredients

Scale
  • 6 medium apples (about 2.5 pounds or 1.1 kg), peeled, cored, and sliced into 1/4-inch thick pieces (Honeycrisp, Granny Smith, or a mix)
  • 1/2 cup (100g) brown sugar, packed
  • 1 tablespoon (8g) cornstarch
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1 tablespoon (15ml) lemon juice
  • 1/2 cup (120ml) salted caramel sauce
  • 1 cup (120g) old-fashioned rolled oats
  • 3/4 cup (95g) all-purpose flour
  • 1/2 cup (100g) brown sugar, packed
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup (113g) unsalted butter, cold and cut into small cubes
  • Flaky sea salt, for finishing

Instructions

  1. Preheat your oven to 350°F (175°C). Position a rack in the center of the oven. Butter your baking dish lightly.
  2. Peel, core, and slice your apples into 1/4-inch thick pieces. You should have about 6-7 cups of sliced apples.
  3. In a large mixing bowl, combine the sliced apples, brown sugar, cornstarch, cinnamon, nutmeg, salt, and lemon juice. Toss until evenly coated. Pour in the salted caramel sauce and fold gently. Let sit for 5 minutes.
  4. In a medium mixing bowl, whisk together the rolled oats, flour, brown sugar, cinnamon, and salt. Add the cold butter cubes. Using a pastry cutter or two forks, cut the butter into the dry ingredients until the mixture resembles coarse meal with some pea-sized butter pieces remaining.
  5. Pour the apple filling into the prepared baking dish and spread into an even layer. Sprinkle the topping evenly over the apples, covering them completely. Do not press the topping down.
  6. Place the dish on a baking sheet. Bake for 40-45 minutes, until the filling is bubbling around the edges and the topping is deep golden brown. If the topping is browning too quickly, tent loosely with foil for the last 10 minutes.
  7. Let the crisp cool on a wire rack for at least 15 minutes. Just before serving, sprinkle with flaky sea salt.

Notes

For best results, use a mix of tart and sweet apples like Granny Smith and Honeycrisp. Keep the butter cold for a crumbly topping. Let the crisp rest for at least 15 minutes after baking to allow the filling to set. Leftovers keep in the refrigerator for up to 4 days and can be reheated in a 350°F oven for 10-15 minutes.
