A warm, spiced baked oatmeal featuring pumpkin puree and a homemade chai spice blend. This comforting fall breakfast is easy to prepare, holds its shape well, and can be made ahead for busy mornings.

  • 1 cup 100% pure pumpkin puree
  • 2 teaspoons chai spice blend (or 1 tsp cinnamon, 1/2 tsp ginger, 1/2 tsp cardamom, 1/4 tsp cloves)
  • 2 cups milk (dairy or plant-based)
  • 2 large eggs, beaten
  • 1/2 cup maple syrup or brown sugar
  • 1 teaspoon pure vanilla extract
  • 1/2 teaspoon sea salt
  • 1 teaspoon baking powder
  • Optional toppings: chopped walnuts, pecans, or Greek yogurt

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13 inch baking dish.
  2. In a large bowl, whisk together the rolled oats, chai spice blend, baking powder, and salt.
  3. In a separate bowl, whisk the eggs, pumpkin puree, milk, maple syrup, and vanilla extract until smooth.
  4. Pour the wet mixture over the dry ingredients and stir gently but thoroughly.
  5. Let the mixture sit for 5 minutes to allow the oats to absorb the liquid.
  6. Fold in optional nuts or seeds, then spread the batter evenly into the prepared baking dish.
  7. Bake for 40-45 minutes until edges are golden brown and the center is set but slightly jiggly.
  8. Let cool for 10 minutes before cutting into squares and serving warm.

Notes

Use room temperature ingredients for better incorporation. Do not use instant oats as they will turn mushy. For a vegan version, substitute eggs with flax eggs and use plant-based milk. Can be prepared the night before and refrigerated overnight; add 5-10 minutes to baking time if baking from cold.
