A warm and comforting peach crisp featuring juicy peaches and a nutty, caramelized brown butter oat topping. Perfect for summer desserts and easy to make with simple ingredients.

Ingredients

Scale
  • 56 medium fresh peaches, peeled and sliced
  • 1 tablespoon lemon juice
  • 1/2 cup granulated sugar
  • 1 teaspoon ground cinnamon
  • 2 tablespoons all-purpose flour
  • 1/2 cup (1 stick) unsalted butter, for browning
  • 1 cup old-fashioned rolled oats
  • 1/3 cup light brown sugar
  • 1/3 cup all-purpose flour
  • 1/2 teaspoon ground cinnamon
  • Pinch of salt

Instructions

  1. Peel, pit, and slice 5-6 medium peaches into roughly 1/2-inch slices. Toss them gently with 1 tablespoon of lemon juice in a medium bowl to prevent browning and add tartness.
  2. Add 1/2 cup granulated sugar, 1 teaspoon ground cinnamon, and 2 tablespoons all-purpose flour to the peaches. Stir until evenly coated to thicken the juices during baking.
  3. In a small skillet over medium heat, melt 1/2 cup unsalted butter. Stir frequently to prevent burning. After about 5 minutes, when the butter foams and turns golden brown with a nutty aroma, remove from heat immediately.
  4. In a separate bowl, combine 1 cup rolled oats, 1/3 cup light brown sugar, 1/3 cup all-purpose flour, 1/2 teaspoon ground cinnamon, and a pinch of salt. Pour the browned butter over and mix until oats are evenly coated and clumpy.
  5. Pour the peach mixture into a 9×9-inch baking dish, spreading evenly. Sprinkle the oat topping evenly over the peaches.
  6. Bake in a preheated oven at 350°F (175°C) for 35-40 minutes until the topping is golden brown and the peach filling is bubbling around the edges.
  7. Let the crisp rest for at least 10 minutes before serving to thicken the juices and set the topping.

Notes

Brown the butter carefully to a golden brown without burning for the best nutty flavor. If topping browns too fast, tent loosely with foil halfway through baking. Let the crisp rest after baking to thicken juices and set topping. For gluten-free, substitute all-purpose flour with almond or gluten-free baking flour. Frozen peaches can be used if thawed and drained well. Add chopped nuts to topping for extra crunch.
