A quick and easy 5-minute overnight oats recipe with creamy peanut butter, ripe banana, and chia seeds for a thick, pudding-like texture. Perfect for busy mornings, this no-cook breakfast is naturally sweetened and endlessly adaptable.

Ingredients

Scale
  • 1/2 cup (45g) rolled oats
  • 1/2 cup (120ml) milk of choice (whole milk, oat milk, or almond milk)
  • 2 tablespoons (30g) creamy peanut butter
  • 1 medium ripe banana (about 120g), half mashed, half sliced
  • 1 tablespoon (15ml) maple syrup or honey (optional)
  • 1 tablespoon (12g) chia seeds
  • Pinch of salt
  • Optional toppings: cinnamon, dark chocolate chips, chopped nuts, extra peanut butter

Instructions

  1. In a small bowl, mash half of the banana with a fork until mostly smooth with a few tiny lumps. Set the other half aside for slicing.
  2. In a mason jar or airtight container, combine the mashed banana, peanut butter, milk, and maple syrup or honey. Stir until the peanut butter is mostly incorporated.
  3. Add the rolled oats, chia seeds, and a tiny pinch of salt. Stir until well combined, scraping the sides to ensure no dry oats remain.
  4. Slice the remaining half banana and gently press the slices into the top of the oat mixture.
  5. Seal the container and refrigerate for at least 6 hours, preferably overnight (8-12 hours).
  6. In the morning, stir the oats. If too thick, add a splash of milk. Add desired toppings and enjoy cold or at room temperature.

Notes

For best texture, use rolled oats and let sit overnight. If in a rush, 4 hours works but texture will be less creamy. To make vegan, use plant-based milk and maple syrup. For gluten-free, use certified gluten-free rolled oats. Store in fridge for up to 3 days; do not freeze.
