Instructions

  1. Make the miso caramel sauce: In a medium saucepan over medium heat, melt 1/2 cup butter. Add 1/2 cup packed brown sugar and whisk until combined. Whisk for about 2 minutes until it starts to bubble. Slowly pour in 1/4 cup heavy cream while whisking constantly. Remove from heat and whisk in 2 tablespoons white miso paste until smooth. Stir in 1 teaspoon vanilla extract. Set aside to cool slightly.
  2. Prepare the apple filling: Preheat oven to 375°F (190°C). Peel, core, and slice 6 apples into 1/4-inch thick slices. In a large mixing bowl, toss apple slices with 2 tablespoons flour, 1 tablespoon lemon juice, 1 teaspoon cinnamon, 1/4 teaspoon nutmeg, and 1/4 teaspoon ginger until coated.
  3. Make the crumble topping: In a separate bowl, combine 1 cup flour, 1/2 cup rolled oats, 1/2 cup packed brown sugar, 1/2 teaspoon cinnamon, and 1/4 teaspoon salt. Add 1/2 cup cold, cubed butter. Using a pastry cutter or fingers, work the butter into the dry ingredients until the mixture resembles coarse crumbs with some pea-sized butter pieces.
  4. Assemble the crumble: Spread the apple mixture evenly in a 9×13-inch baking dish. Pour the miso caramel sauce over the apples and spread with a spatula. Sprinkle the crumble topping evenly over the apples and caramel.
  5. Bake: Place the dish on a baking sheet. Bake for 35 to 40 minutes, or until the topping is golden brown and the filling is bubbly around the edges. Let cool for at least 10 minutes before serving.
