  • 2 ounces goat cheese log (soft, spreadable)
  • 4 ounces prosciutto (thinly sliced)
  • 4 ounces Genoa salami
  • 1 cup mixed crackers (water crackers, rosemary crackers, or plain baguette slices)
  • 4 slices of a good baguette (day-old preferred)
  • 1/4 cup honey (local honey if available)
  • 1/4 cup fig jam or apricot preserves
  • 1/3 cup marinated olives (castelvetrano or kalamata)
  • 1/4 cup cornichons or small pickles
  • 1/2 cup fresh grapes (red or green)
  • 1/4 cup dried apricots or figs
  • 1/4 cup roasted almonds or walnuts (salted)

Instructions

  1. Take the cheese out of the fridge 20 minutes before serving.
  2. Prepare the brie: microwave for 20-30 seconds on a microwave-safe plate until slightly warm and gooey, but not melted.
  3. Slice the cheddar into thin triangles or small cubes, about 1/2 inch thick.
  4. If the goat cheese log is firm enough, slice it into 1/2-inch rounds. If too soft, place the log on the board for spreading.
  5. Make salami roses: overlap 4-5 slices of salami, fold the stack in half, then roll tightly from one end to form a rose shape. Place seam-side down.
  6. Fold each slice of prosciutto loosely into a ribbon shape, keeping airy ruffled edges.
  7. Arrange crackers in small clusters around the board, leaving gaps. Fan out baguette slices in a separate spot.
  8. Spoon fig jam or apricot preserves into a small bowl and place on the board. Drizzle honey in a zigzag over the brie or pour into a small dish. Place olives and cornichons in separate small bowls or directly on the board.
  9. Scatter grapes, dried apricots, and almonds into empty spaces, filling every inch of the board.
  10. Step back and check for bare spots; add more crackers or nuts if needed. Drizzle extra honey if desired. Serve immediately, or cover with plastic wrap and refrigerate for up to 2 hours (let come to room temperature for 15 minutes before serving).

Notes

For best results, let cheese come to room temperature before serving. Warm brie for 20-30 seconds only to avoid rubbery texture. Don’t overcrowd the board; leave breathing room between items. Balance textures: soft, crunchy, chewy, and juicy. Serve at room temperature. Leftovers can be stored separately: cheese in wax paper, crackers in airtight container, meats in sealed container for up to 3 days.
