  • 1 pound smoked kielbasa, sliced into half-moons
  • 2 cans (15 oz each) white beans (Cannellini or Great Northern), rinsed and drained
  • 4 cups low-sodium vegetable broth
  • 1 large yellow onion, diced
  • 4 cloves garlic, minced
  • 2 cups fresh baby spinach
  • 1 teaspoon dried thyme (or 1 tablespoon fresh)
  • 1/2 teaspoon red pepper flakes (optional)
  • 1 tablespoon olive oil
  • Salt and black pepper to taste

Instructions

  1. Slice the kielbasa into half-inch rounds or half-moons and set aside.
  2. Heat olive oil in a large pot over medium heat. Add diced onion and a pinch of salt, cooking until translucent and soft (4-5 minutes).
  3. Add minced garlic, dried thyme, and red pepper flakes. Stir constantly for about 60 seconds until fragrant, being careful not to burn the garlic.
  4. Push onions to the side and add the sliced kielbasa. Let it sear undisturbed for a minute, then stir and cook until browned and slightly crispy (5 minutes).
  5. Pour in the vegetable broth, scraping up any browned bits from the bottom of the pot. Bring to a gentle simmer.
  6. Add the rinsed and drained white beans. Simmer gently for about 10 minutes to allow flavors to meld and beans to soften.
  7. Stir in the fresh spinach and cook for 1-2 minutes until wilted but still bright green.
  8. Taste and season with black pepper and salt as needed. Serve hot with crusty bread.

Notes

For a thicker soup, do not rinse the beans, as the starchy liquid helps thicken the broth. If watching sodium, rinse beans thoroughly. Ensure kielbasa and broth are certified gluten-free if needed. Leftovers store in the fridge for up to 4 days or freeze for up to 3 months.
