This recipe for Cozy Honey Garlic Crockpot Chicken Thighs is a love letter to a lost diner meal. It’s the kind of dinner you throw together in ten minutes on a Tuesday morning, and then the whole house smells like pure comfort by the time you walk back through the door.

Ingredients

Scale
  • 2 pounds boneless, skinless chicken thighs (about 6–8 thighs)
  • Salt and black pepper, to taste
  • 1/3 cup honey
  • 1/4 cup low-sodium soy sauce
  • 6 cloves garlic, minced (about 2 tablespoons)
  • 2 tablespoons tomato paste
  • 1 tablespoon rice vinegar
  • 1 tablespoon olive oil
  • 1 tablespoon cornstarch mixed with 2 tablespoons cold water (optional, for thickening)
  • 2 tablespoons chopped fresh parsley or green onions (for garnish)
  • Sesame seeds (optional, for garnish)

Instructions

  1. Season the chicken. Pat chicken thighs dry with paper towels. Season generously on both sides with salt and black pepper. Set aside.
  2. Sautรฉ the garlic. Heat olive oil in a small skillet over medium heat. Add minced garlic and cook for about 1 minute, until fragrant but not browned.
  3. Make the sauce. In a mixing bowl, whisk together honey, soy sauce, sautรฉed garlic (with oil), tomato paste, and rice vinegar until smooth.
  4. Layer the chicken. Place seasoned chicken thighs in the bottom of a 6-quart slow cooker in a single layer. Pour honey garlic mixture evenly over the top.
  5. Cook low and slow. Cover and cook on LOW for 5-6 hours, or on HIGH for 3-4 hours, until chicken reaches an internal temperature of 165ยฐF and shreds easily with a fork.
  6. Thicken the sauce (optional). About 30 minutes before serving, remove chicken to a plate. Whisk together cornstarch and cold water until smooth. Pour slurry into slow cooker with remaining sauce, whisk, and let cook uncovered for 20-30 minutes until thickened. Return chicken to pot and coat well.
  7. Garnish and serve. Sprinkle with fresh parsley or green onions and sesame seeds if using. Serve immediately over steamed rice, mashed potatoes, or roasted vegetables.

Notes

Don’t skip searing the garlicโ€”it transforms the flavor. Flip chicken halfway through cooking for even coating. Let chicken rest in sauce for 10-15 minutes before serving. For a thicker sauce, use cornstarch slurry. Chicken thighs are preferred over breasts for moisture.
