A quick and easy overnight oats recipe that recreates the magic of a beloved Portland café. Creamy, protein-packed, and ready in five minutes, these oats are perfect for busy mornings.

  • ½ cup (50g) rolled oats
  • ½ cup (120ml) milk of choice
  • ¼ cup (60g) plain Greek yogurt
  • 2 tablespoons (32g) creamy peanut butter
  • 1 scoop (about 30g) vanilla protein powder
  • 1 tablespoon (15ml) maple syrup or honey
  • 1 tablespoon (12g) chia seeds (optional)
  • Pinch of salt (if peanut butter is unsalted)
  • Optional mix-ins: dark chocolate chips, sliced banana, chopped peanuts, extra peanut butter drizzle

Instructions

  1. Grab a 16-ounce mason jar or any glass container with a lid.
  2. Add dry ingredients first: ½ cup rolled oats, 1 scoop vanilla protein powder, and 1 tablespoon chia seeds (if using).
  3. Add wet ingredients: 2 tablespoons creamy peanut butter, ¼ cup Greek yogurt, ½ cup milk, and 1 tablespoon maple syrup or honey.
  4. If using a jar with a tight lid, screw it on and shake vigorously for about 30 seconds until fully combined. If using a bowl, whisk with a fork until smooth. Scrape the bottom to incorporate peanut butter.
  5. Check consistency: mixture should be thick and pourable. Add more milk if too thick, or more oats if too thin.
  6. Refrigerate for at least 6 hours, preferably overnight.
  7. In the morning, stir well. If too thick, add a splash of milk. Enjoy cold or microwave for 45-60 seconds for warm oats. Top with desired toppings.

Notes

For best texture, use room-temperature peanut butter. Mix protein powder with dry oats first to prevent clumps. Let oats rest at least 6 hours for optimal creaminess. Batch prep for up to 3 days. Do not freeze.
